Missing the juicy and beautifully marbled Hida Wagyu from Japan’s Gifu prefecture? Origin Grill is offering this celebrated beef in a multitude of flavours in a dégustation menu as well as in six à la carte dishes until Nov 14. Four of the dishes are highlighted below.
The Wagyu Tataki ($68) features A5 Hida Wagyu tenderloin seared quickly that leaves its middle rare. It is paired with watercress, watermelon radish, onion chips, cherry tomatoes and sunchoke dressing.
If you prefer your succulent A5 Wagyu tenderloin to have a lightly charred flavour, go for the Wagyu Skewers ($65) that are lightly grilled in a Josper charcoal oven. To cut through the fattiness, the meat is glazed with a tangy yuzu marinade and topped with chilli.
You will find the A5 Hida Wagyu rib-eye working very well in the Wagyu Sando ($98) where the panko-crusted meat is sandwiched between toasted sliced white loaf and slathered with black garlic mayo.
Purists will go for the A5 Hida Wagyu striploin or rib-eye ($198) to enjoy the mouth-watering beefiness with a side of caramelised eggplant that is glazed with sake and mirin for additional depth.
