60g cake flour
1/2 tsp vanilla essence
30g unsalted butter
1 tbsp honey or maple syrup
1 bunch of blueberries
a little icing sugar
1 Prepare an 8-inch cast-iron pan.
2 Beat egg with egg whisk, then add sugar and stir slightly. Sieve in cake flour. Pour in milk and vanilla essence to stir evenly. Set aside.
3 Place cast-iron pan in oven preheated to 180°C. Remove preheated pan and put in butter. When butter melts, pour in batter and gently shake the pan so that the batter covers the whole pan.
4 Bake in oven for 10 to 15 minutes till the edges expand and turn golden brown.
5 Remove. Drizzle honey on top of pancake. Add strawberries and blueberries. Lastly, sprinkle with some icing sugar for decoration.
