All-you-can-eat Peranakan fare

The buffet spread at the brand new all-day dining restaurant Peppermint (formerly known as AquaMarine) sees over 20 Peranakan favourites making their appearances from now till 11 April 2021.

On top of the usual offering of fresh seafood with local and international delights freshly prepared in the open kitchen and served to your table, you can also expect Nonya dishes such as Ayam Goreng Rendang (fried spring chicken with rendang sauce), Itek Sio (braised duck leg with coriander and tamarind) and Udang Assam Nanas (freshwater prawn cooked in aromatic pineapple assam gravy).

Three tingkats (tiffin carriers) containing three quintessential Peranakan dishes – Ayam Buah Keluak, buttefly pea rice and Nonya Chap Chye are served at the start of your meal.

A highlight is the Ikan Kuah Ladah, which features juicy stingray simmered in a flavourful gravy spiced with turmeric and peppercorn. The sweet-toothed diner can dig into Durian Pengat, Chendol Cake and Ondeh Ondeh.

Chefs picking ingredients from the hotel’s urban farm to make their special sauces or marinades.

Exclusively for dinner are scrumptious items, such as the robust Black Angus Beef Oxtail Pongteh and tender Tajima Wagyu beef short ribs presented in a satay gravy with crispy grains of puffed rice, not to be missed by beef lovers.

Lunch: $65 per adult (12pm to 2.30pm from Mon to Fri; 12pm to 3pm on Sat, Sun & public holidays)
Dinner: $88 per adult (6.30pm to 11pm)
