Abalone Mushroom with Assam

300g abalone mushroom
50g assam solution
3 tbsp tomato ketchup
2 tbsp chilli sauce
sugar to taste
salt to taste
some pineapple caviar

Spicy Fruit Sauce Ingredients (blended well)
5 red chillies
1 lemongrass
50g pineapple
30g green apple
1/2 piece ginger flower
5g turmeric
30g galangal

1    Remove both ends of mushroom before making criss-cross cuts, then deep-fry till golden brown.
2    Heat a little oil in wok. Add spicy fruit sauce, assam solution, tomato ketchup, chilli sauce, sugar and salt to stir-fry till fragrant.
3    Add fried mushroom and stir well. Dish out and top with pineapple caviar.
