Peanut-Green Pea Cookies

青豆花生饼

Ingredients
180g salted green peas (from packet), blended coarsely
100g roasted peanuts, blended coarsely
200g cake flour
90g icing sugar
140g peanut oil
1 egg yolk, mixed well with 1 tsp milk and 1 drop oil
some roasted peanuts (for garnishing)

Method
1    Beat blended green pea, blended peanut, cake flour and icing sugar in a mixing bowl evenly.
2    Add peanut oil to mix well.
3    Transfer dough to workspace. Cover with a piece of plastic paper. Use a rolling pin to gently press into a 2cm-thick dough skin.
4    Press out round shapes with a circular mould to arrange on a baking tray lined with parchment paper. Sweep a layer of the yolk mixture and top with roasted peanuts.
5    Bake in preheated oven at 150°C for 20 minutes.

用料
袋装盐焗青豆180克,搅成粗碎状
烤香花生100克,搅成粗碎状
低筋面粉200克
糖粉90克
花生油140克
蛋黄1个,加入牛奶1茶匙和油1滴混匀
烤香花生适量(点缀用)

作法
1    将青豆碎、花生碎、低筋面粉及糖粉一起放入搅拌桶里,搅打均匀。
2    加入花生油拌匀。
3    取出面团放案板上,盖上一张塑料纸,用擀面棒轻轻压成2公分厚的面皮。
4    用圆形模按压出圆形饼状,排列在已铺上油纸的烤盘里。扫上一层蛋液,将花生置于其上做点缀。
5    预热烤箱至摄氏150度,放入烤盘,烘烤20分钟即可出炉。
