180g salted green peas (from packet), blended coarsely
100g roasted peanuts, blended coarsely
200g cake flour
90g icing sugar
140g peanut oil
1 egg yolk, mixed well with 1 tsp milk and 1 drop oil
some roasted peanuts (for garnishing)
1 Beat blended green pea, blended peanut, cake flour and icing sugar evenly in a mixing bowl.
2 Add peanut oil to mix well.
3 Transfer dough to worktop. Cover with a piece of plastic paper. Use a rolling pin to gently press into a 2cm-thick dough skin.
4 Press out discs with a circular mould to arrange on a baking tray lined with parchment paper. Brush a layer of the yolk mixture and top with roasted peanuts.
5 Bake in preheated oven at 150°C for 20 minutes.
