hile away your afternoon on Peranakan treats presented on a multi-tier stand or savour cocktails crafted in honour of Sang Nila Utama, a 13th-century Palembang prince who founded the kingdom of Singapura in 1299.
Be treated to modern renditions of Nonya dishes including deep-fried rendang chicken bun (mantou) and a topping of sweet spicy mango that is a perfect foil for the fragrant five-spice Kurobuta pork ngo hiang, an indulgent take on the classic Peranakan dish. Locally farmed ingredients of strawberries, kale and arugula are also featured in other savoury delights such as kale pesto crab sandwich and Kikorangi blue cheese strawberry crostini.
Sweet-toothed guests can forge ahead on the Straits heritage culinary journey to enjoy six scrumptious desserts including ondeh ondeh cake, a kaya sponge cake with coconut mousse and luscious caramel gula melaka core, and banana Genoa cake topped with caramel whipped cream made all the more appetising with kumquat curd. Other highlights include pulut hitam chiffon cake, chendol agar jelly and ang ku kueh, the quintessential Singaporean snack. Scone lovers will find delight in Milo and lemon scones, served alongside homemade gula melaka coconut jam, strawberry jam and clotted cream.
